Anyone who has indulged in Scottish Tablet will tell you it’s really like nothing else in the world. A first glance you would be forgiven for assuming it is fudge but when you bite into a piece it instantly becomes clear that this is no fudge! With a gritty, melt-in-the-mouth texture and so sweet it makes your teeth ache; it really is quite unique.

Makes about 1kg.

Ingredients

  • 250ml Milk
  • 55g Butter
  • 900g Sugar
  • 1 Tin Condensed Milk
  • 20ml Vanilla extract

Method

  1. Bring the milk and butter to the boil melting the butter, Then turn down heat and stir in sugar until disolved.
  2. Once sugar has disolved, bring to boil and boil on a rolling boil for 5 minutes.
  3. Once boiled add the Condensed milk and bring back to the boil stirring continuasly for 10-15 minutes.
  4. After 10 minutes the mixture should start to turn a golden brown and thicken, it may need a few more minutes just to get to the right colour once there remove from the heat and leave to stand for 5 minutes.
  5. Once rested for 5 minutes whisk in the Vanilla extract and continue to whisk until mixture starts to thicken.
  6. Pour mixture in to a lined tin and allow to cool until completely cold and set this maybe a few hours.
  7. Once cooled and set remove from tin and cut into bite size cubes.
