Scottish Tablet
Anyone who has indulged in Scottish Tablet will tell you it’s really like nothing else in the world. A first glance you would be forgiven for assuming it is fudge but when you bite into a piece it instantly becomes clear that this is no fudge! With a gritty, melt-in-the-mouth texture and so sweet it makes your teeth ache; it really is quite unique.
Makes about 1kg.
Ingredients
- 250ml Milk
- 55g Butter
- 900g Sugar
- 1 Tin Condensed Milk
- 20ml Vanilla extract
Method
- Bring the milk and butter to the boil melting the butter, Then turn down heat and stir in sugar until disolved.
- Once sugar has disolved, bring to boil and boil on a rolling boil for 5 minutes.
- Once boiled add the Condensed milk and bring back to the boil stirring continuasly for 10-15 minutes.
- After 10 minutes the mixture should start to turn a golden brown and thicken, it may need a few more minutes just to get to the right colour once there remove from the heat and leave to stand for 5 minutes.
- Once rested for 5 minutes whisk in the Vanilla extract and continue to whisk until mixture starts to thicken.
- Pour mixture in to a lined tin and allow to cool until completely cold and set this maybe a few hours.
- Once cooled and set remove from tin and cut into bite size cubes.
